All natural
We work according to traditional work methods and ancient French recipes. We only use natural and honest ingredients. We don’t add preservatives or other chemical proofers to our bread and we use real butter in stead of margarine, for example for our croissants.

Sourdough
Instead of using chemicals, we use our home-made liquid yeast (sourdough, or 'levain' in French). This gives a soft, subtle smell and flavor to all our bread and, at the same time, improves the keeping time of the bread in a natural way.

By the way, sourdough bread is very healthy! Sourdough is two organisms, wild yeast and lactocille bacteria (the same as found in yoghurt), in symbiosis. During the long process of making sourdough bread (up to 36 hours) the wild yeast and bacteria get to work, fermenting the dough slowly but surely, pre-digesting the flour so that the bread becomes far more digestible and healthful.
